Batatya Toi a Konkani dish which goes very well with Hot Pooris. One of my ayi’s recipes which is simple and tasty.
Ingredients:
- Mashed Boiled Potato - about 1 cup
- Dry Red Chillies – 2
- Grated Coconut – ˝ cup
- Curry Leaves – 1 string
- Ginger - 1/2 inch piece
- Green Chillies - 4
- Tamarind Paste - 1/2 tsp
- Turmeric/Haldi - 1/4 tsp
- Coriander Leaves - few sprigs
- Mustard seeds – For saute
- Asofotida – For saute
- Salt
- Oil
Method:
- Add about 4 tsp of oil in the pan. Add Mustard, asofotida, curry leaves, red chillies and sauté. After that add the cut ginger, green cillies, grated coconut, tamrind paste, turmeric power and salt and mix well.
- Add the mashed potatoes and water and after some time add the coriander leaves and boil till its done to consistency and server hot.
