Ingredients:
2 raw mangoes (3 cups grated)
1 and 1/2 cup grated jaggery
4 cloves
1 tea spoon cardamom powder
1/2 tea spoon cinnamon powder (optional)
1 table spoon ghee
Pinch of salt
Preparation:
* Peel off the skin and grate the raw mangoes.
* Add grated jaggery
* Heat ghee in a pan, add cloves, then the grated mango and jaggery.
* Add pinch of salt and mix well and cook until it is thick in consistency. Adding salt will enhance the sweetness of the jam.
* When it starts thickening, add cinnamon power (optional) and cardamom powder and give it a mix.
* Switch off the gas flame and allow it to cool. The tasty and tangy Ambli Jam is ready to be served with dosa or chapati or poori.
* It can be preserved in refrigerator for couple of months.
Special Tips:
Adding salt will enhance the sweetness of the Jam. Use raw mangoes which are less sour. It can be preserved in refrigerator for couple of months.
