Gode Tausali | Cucumber Cake | Konkani Recipe

Ingredients:

* finely chopped cucumber 4 cups
* Grated coconut 2 cups
* Grated Jaggery 2 cups
* Idli rava 2 cups
* cardamom powder 1 tea spoon
* pinch of salt

Preparation:

* Peel the skin and remove all seeds of cucumber
* chop the cucumber with the help of chopper
* Squeeze the excess water from the cucumber
* To the chopped cucumber add coconut, jaggery, salt, cardamom powder.
* wash idli rava and remove all the water.
* Now add this rava to the cucumber.
* Mix it all and cook on low to medium flame till the mixture becomes little thick.
* In a cake tin or a cooker vessel layer some turmeric leaves.
* pour the mixture and spread evenly.
* Keep some more leaves on top of it.
* Steam it in a idli cooker for 20 minutes on high flame.
* after it cooks well cut into desired shape and serve with ghee.

Special Tips:

Serve the dish with ghee on top.
